Yes. EDELPDF is licensed under the GNU AGPL-3.0 and built on open-source libraries (pdf.js, pdf-lib, Tesseract). Anyone can read the code and check what it does.
No. Everything, including PDF to Word and OCR, runs on your computer and works offline. The app only goes online to check for updates.
